Coconut Macaroon


The Jowoian Coconut Macaroonβ„’ is a delicious snack. It's difficult to stop eating them once you start. They are a perfect powerfood for when you're hacking on a project and cannot tear your focus from the screen. 5 minutes to prepare, and a shit ton of calories to keep you coding and those fingers hitting keys.

Time taken: around 10 minutes prep. & 20 mins in the oven

Ingredients

Description Quantity
Medium Eggs x2
Desiccated coconut 240g
Ground Almonds 55g
Sunflower oil 100g
Light muscovado sugar 130g
Baking powder A third of a teaspoon (not essential)
Salt Two pinches (not essential)
Vanilla extract One tea spoon (not essential)
Aluminum foil or grease-proof paper About 40cm (not essential)

Before getting started be sure to pre-heat your oven to around 180-200 celsius (You won't find any fahrenheit conversions here... I am European, tough luck skipper!)

How to

Right, lets get cracking (pun intended).

Grab a large bowl and crack your 2 eggs into it. Don't be a noob and let any shell in there.

Next, sprinkle in a little baking powder. Don't over do it, otherwise these bad boys will inflate like a balloon... Also add a pinch or two of salt at this stage.

Next wack your sugar into the bowl.

And then add your sunflower oil, keeping a small amount to grease the tray later.

There is a difference between Coconut flour and desiccated coconut...

A very big difference in-fact...

If you have ever tried a Macaroon made with just Coconut flour, you'll know what I mean. It is like eat a ball of sugary dirt. It's so hungry for water that it'll get stuck in your throat as you attempt to swallow it. Then it will try to choke you out like a mixed martial artist. πŸ±β€πŸ‘€

Just to clarify, we are using desiccated coconut, but a sprinkle of coconut flour could be used as a (less chewy and delicious) alternative to almond flour. Got it? πŸ€”


Add your desiccated coconut

And sprinkle on your almond flour and mix everything together. The almond flour is really important, it makes the final product extra chewy and delicious and binds everything together.

At this point, the texture of the mix should be quite squishy but not liquid. It should stay together in a lump on a spoon.

Prepare your baking tray with some aluminum foil, add a tiny bit of sunflower oil on top of the foil so that the macaroons don't stick too badly! Or better yet, use Grease-proof paper!

Now, take a table spoon and take approximately 12 evenly sizes spoonfuls and dollop them on the tray in an orderly fashion!

And, you are done. Put the tray in the oven and cook for about 20 minutes until golden brown.
